750 g (1 ½ lb) Sear Fish fillet- skinned and cut into 4 pieces, 2 tablespoons plain flour, 4 tablespoons oil, 2 onions- sliced, 2 garlic cloves – crushed, 1 teaspoon ground turmeric, 4 green chillies – finely chopped, 2 tablespoons lemon juice, 175 ml (6fl oz) coconut milk, salt, fresh herbs, to garnish

 
Coat the fish with the flour.  Heat the oil in a frying pan, add the fish, and fry quickly on both sides. Remove and set aside. 
Add the onion and garlic and fry until soft and golden. Add the turmeric, chillies, lemon juice, coconut milk and salt to taste. Simmer, uncovered, for 10 minutes until thickened. Return the fish, spoon over the sauce and cook for 2-3 minutes. Garnish and serve. 
 
Serve 4.
