1 fresh coconut, 600 ml (1 pint) boiling water, 75 g (3 oz) ghee, 1 large onion, sliced 4 garlic cloves, sliced, 7.5 cm (3 inch) piece of fresh root ginger, peeled and thinly sliced, 2 teaspoons fenugreek seeds, 2 teaspoons peppercorns, 2 teaspoons chilli powder, 2 teaspoons ground coriander, 1 teaspoons ground turmeric, 1 teaspoon salt, 500 g (1 lb) natural yogurt, 300 ml ( ½ pint) milk, 500g (1 lb) crab meat

To prepare the coconut milk,  take ‘Daily Delight’ grated coconut in a container, add water and squeeze the grated coconut. Strain the milk through a strainer. Repeat the process and use the second milk first while cooking. Else beat the ‘Daily Delight’ grated coconut in a mixie and strained the milk in a bowl before use.
Heat the ghee in a pan, add the onion, garlic and ginger and fry for 5 minutes. Add the spices and salt. Stir and fry for 2-3 minutes, then add the coconut milk. Mix the yogurt with the milk and stir into the pan. Bring to just below boiling pint and simmer for 5-6 minutes.   Add the crab meat and sliced coconut and cook gently for 5 minutes. Serve at once.
