25 g (1 oz) block tamarind, 1 small red pepper, cored, deseeded and chopped, 25 g (1oz) small onions, chopped 2 garlic cloves, chopped, 1 red chilli, deseeded and chopped 1 tablespoon ground lemon grass 6 tablespoons oil

4 teaspoons caster sugar 2 teaspoons lime juice, 500 g (1 lb)  prawns, Watercress to serve
Break up the tamarind and soak in 175 ml (6 fl oz) boiling water for 10-15 minutes then press through a sieve to extract as much liquid as possible. Discard the pulp.
 
Place the red pepper, onions, garlic, chilli and lemon grass in a liquidizer or food processor and blend. Heat the oil in a pan, add the pepper mixture and stir-fry for 5 minutes. Gradually blend in the tamarind liquid, sugar, lime juice and salt to taste. Add the prawns and stir-fry for 5 minutes or until the prawns are just firm to the touch. Serve with watercress.
